Technical Data

Cultivation

Soil: clay, limestone, marl. Plots located at the top of the slope.
Grown using traditional methods without the use of chemical herbicides or synthetic fertilizers.

brewing

The grapes are harvested by hand and carefully transported in small containers.
After harvest, the fruit is thoroughly sorted on a sorting table upon receipt.
The grapes are gently pressed and then transferred to barrels for wild yeast fermentation. After fermentation, the wine is left with a fine lees.
Aging together and batonnage give the wine texture and complexity.
Malolactic fermentation is carried out 100% in barrels, and after 12 months of barrel aging,
The wine is then aged in tanks for a further 4 to 6 months, then lightly clarified and filtered before being bottled at the domaine.
