A cuvée made from grapes harvested from the San Turbano vineyard, one of the most important vineyards in Valpolicella Superiore. The grapes are dried for 20 to 25 days, enhancing the flavor and producing rich aromas and smoothness. Additionally, aging for about 2 years results in a perfect balance. This wine expresses remarkable elegance and complexity.

Deep ruby ​​red in color. After a rich bouquet of red fruits, the aroma of herbs spreads. In the mouth, you can feel the impression of spices, which leads to a rounded texture and elegant taste.

Production

Cultivation: The Monte Santurbano vineyard, located on sunny hills in the town of Fumane at an elevation of 280 to 350 meters, enjoys a favorable environment. The volcanic limestone and clay soil retains moisture, preventing excessive dryness.

Training System: The vines are arranged in the Verona-style pergola supported by dry stone walls known as "maroni."

Vinification: The grapes are crushed using a roller-type destemmer. Maceration is carried out in stainless steel tanks at a controlled temperature of 20 to 24°C for 10 days, with daily pumping over and délestage. After this, the wine is transferred to glass-coated cement tanks to complete alcoholic fermentation and malolactic fermentation. It is then aged in 500L Allier oak barrels for 24 months, followed by bottle aging.

The family has made a major contribution to Valpolicella's winemaking tradition, becoming a benchmark throughout the world. Today, the Speri family still vinifies exclusively its own grapes and follows every stage of production, from vine to bottle, with particular attention to tradition and the environment, including organic certification. The Speri winery vinifies only indigenous Valpolicella grapes. In addition to the three traditional grape varieties, Corvina, Rondinella and Molinara, small quantities of lesser-known old varieties are used, such as Oseleta, Rossanella, Pelara and Cabrosina.
