When the "Calvados Pays d'Auge" appellation was created in 1942, its regulations did not impose a minimum ageing period.
At the time, most Calvados was consumed without coloring. It was called "La Blanche". Later, a minimum of two years of aging in oak barrels was gradually made mandatory. Now, Calvados Christian Drouhin expresses La Blanche in a new way. It is distilled twice in copper stills and made from more than 30 varieties of cider apples.
