This wine is made from the taille (the latter half of the juice) of three varieties grown at the Domaine. It combines the greenness of Mauzac, the lively acidity of Chenin, and the fruitiness of Chardonnay. This casual, natural sparkling wine is easy to enjoy.
Owning & Enjoying

Tasting notes
Greenish yellow in appearance. Slightly cloudy.
Botanical and floral nuances spread.
Fruity aroma reminiscent of apples and pears.
The slightly bitter herbal notes add a nice accent, creating a pleasant balance with the subtle sweetness.

Cultivation
Terroir: Clay-limestone hills in the foothills of the Pyrenees, 350-400m above sea level
Organic farming since 1983
Hand-picked and selected

Winemaking
After cooling at low temperature and allowing to settle, the wine is fermented at low temperature in a stainless steel tank.
Fermented with natural yeasts without the addition of sulfites.
It is bottled mid-fermentation, and the residual sugar in the bottle gives it a slight effervescence.
The wine is not disgorged, so sediment may remain at the bottom of the bottle.
This is due to natural fermentation.

"There's not much in the Haute Vallée de l'Aude, apart from its magnificent natural surroundings. No industry, no urban development, apart from the memory of Catharism. It was in this unspoilt land that I planted my first vineyard, in 1983, on a rugged hillside at an altitude of 400 metres," explains Marc Leseney, when we meet at the Millésime Bio 2023 trade fair.
