Tasting notes
A mellow fragrance with aromas of ripe citrus fruits.
In the mouth, you can feel the powerful fruitiness reminiscent of pineapple and grapefruit, with a rich and deep flavor.
The alcohol and acidity are well balanced, and the light aroma of the barrel envelops the whole.
A slight saltiness tightens the aftertaste and leads to a long, impressive finish.

Pairing
Grilled Spanish mackerel in Saikyo style, Camembert and white peach salad, butter-sautéed scallops with the scent of yuzu

Production

Cultivation
The vineyard is located on a slope of clay-limestone soil at an altitude of 350m.
The grapes grown using the Guyot method produce low yields of approximately 35hL/ha.

Winemaking
The harvest is done by hand in mid-September and rigorous selection is carried out in the field.
The grapes are harvested in the cool morning hours and are immediately fermented to maintain their freshness.
It is pressed, left to stand at low temperature for débourbage (racking), and then fermented in barrels.
The barrels are old, so the nuances of the wooden barrels are subtle,
The aging period can last up to a year, and malolactic fermentation also takes place in barrels.
Only small amounts of sulfites (total SO₂ < 40mg/L) are added at bottling.
Lightly filtered, but may be slightly hazy.

"There's not much in the Haute Vallée de l'Aude, apart from its magnificent natural surroundings. No industry, no urban development, apart from the memory of Catharism. It was in this unspoilt land that I planted my first vineyard, in 1983, on a rugged hillside at an altitude of 400 metres," explains Marc Leseney, when we meet at the Millésime Bio 2023 trade fair.
