This wine uses hand-picked Sauvignon grapes from a cool, riverside plot. After early morning harvest, the grapes are slowly macerated at low temperatures and then aged for six months in stainless steel tanks and old barrels. The fresh aroma of lemon and green apple is layered with white flowers and herbs, and the firm acidity and rounded mouthfeel create an exquisite balance. This is a sophisticated and distinctive white wine.

Tasting notes
Pale lemon yellow in color. Fresh grapefruit and lime from the glass.
Aromas of green apples are layered with white flowers, herbs and a slight minerality.
On the palate, the firm acidity derived from the cool terroir is pleasant, while the rounded texture provides balance.
The aftertaste has a refreshing citrus flavor and a slight sense of maturity, giving it a sophisticated taste that sets it apart from other Sauvignon wines from southern France.

Soil: clay-limestone
Terroir: cool, late-harvested plot along the river, facing northeast, at an altitude of 230m
Harvesting: Hand-picked

Winemaking
Brewing: Natural yeast fermentation
After harvest, the grapes are macerated for eight hours before being pressed (2024 was a cool year, so the Sauvignon grapes were harvested early in the morning, macerated in a cold cellar for a day, and pressed the next day).
After fermentation at low temperature, it is clarified.
Aged for 6 months in stainless steel tanks and 500L and 700L old barrels.

About the Winery

Clos Constantin

Clos Constantin

In 2009, Pierre Halley, originally from Argelliers, took over the vineyards of his uncle, a cooperator. There, he started to vinify his own wine but could not do so at home. So, in 2015, he joined forces with his friend Samuel Durand, former sommelier at Lavinia. In 2017, the two of them created Clos Constantin and its winery. In fact, the name of the estate is a tribute to Pierre's great-grandfather, whose first name it was.
