You can sense the flavors of spice from the barrel, white-fleshed fruit, lime, and grapefruit peel.
The finish is powerful and rich, with spices, fresh almonds and a minerality reminiscent of flint. This wine perfectly expresses the balance between the minerality of the terroir and the creaminess and freshness of the two grape varieties.

Production

The grapes used are from carefully selected plots of Semillon and Sauvignon Blanc vines with an average age of 45 years.
White wine grape harvest began on August 24th.
Harvesting began first with the young vines and ended on September 8th (a total of 12 days).
The result is a wine characterized by a fresh style, robust fruitiness, and deep minerality.

Pressing: Gentle, slow pneumatic press (approximately 2 hours 30 minutes).
Fining: Debourbage at 10°C.
Fermentation: 15% is fermented in new barrels and temperature is strictly controlled (17°C to 22°C).
Malolactic fermentation: Not performed to preserve fresh acidity.
Aged for 9 months in 88% first-use barrels and 12% new barrels.
Batonnage is adjusted for each vintage and is carried out on average once a week or once every two weeks.
