A blend of Sauvignon Blanc and Merseguera grown in the Mediterranean sunshine produces a refreshing acidity and delicate minerality. Aromas of lemon yogurt, green apple, and apricot are layered with nuances of fennel and white flowers, creating a refreshing yet complex taste.

Tasting Notes
The Sauvignon Blanc brings powerful notes of lemon and white flowers, while the Merseguera gives it a fresh, lively and excellent acidity. An interesting hint of saltiness and a touch of thyme give it a Mediterranean character.

Technical Data

The grapes are kept in a cold room for 24 hours and then pressed very lightly using a pneumatic press. Each variety is vinified separately and fermented in small stainless steel tanks at a very low temperature of 16 degrees.

After alcoholic and malolactic fermentation, the two wines are brought together and in contact with fine lees until bottling.
