The aroma of wild strawberries and cherries rises with fine bubbles, and the subtle aroma of spice and toast creates an elegant finish. The fresh acidity and delicate minerality harmonize to bring out the brilliance of the fruit. A perfect companion before or during a meal, this champagne has the color of a rosé but the taste of a white.

Tasting Notes
The color is pale salmon pink with a delicate bronze sheen.
The bubbles are fine and long-lasting, dancing gracefully in the glass.
The aroma is complex and elegant, blending red berries, white peach, and subtle hints of almond and baked goods.
On the palate, fresh acidity and a slight minerality spread in a balanced way, and the sweetness of red fruits gently blends in.
The finish is clean and pleasant, with a long lingering aftertaste.

Technical Data

Dosage: 2g/L (Extra Brut)
・Production quantity: 2,500
Pressing: The juices are classified according to their aroma and ageing potential.
Maceration: The grapes from the Meunier plot are destemmed and left in tanks for 10 to 15 days.
The wine is then aged in barrels before the final blending.
Fermentation: Temperature is controlled between 16 and 20°C to suppress yeast growth and maintain the complex aroma molecules.
- Barrel aging: Partially carried out depending on the characteristics of the wine from each plot.
- No clarification, no filtration, no stabilization.
- Blended and bottled 8 to 9 months after harvest.
Aging
- After bottling, the wine is left on the lees for at least 5 years.
- After disgorgement, the wine is stored in the cellar for a minimum of 6 months.
