It has a bright, clear color and an aroma of dried flowers and red cherries. It has a strong mineral feel, delicate tannins and a chalky finish, and you can feel the individuality of the Kimmeridge layer.

Tasting notes
Very strong, bright and clear in color. The aroma of dried flowers and red cherries spreads immediately, giving a spicy and light impression. The taste is very mineral, with fine tannins and a chalky aftertaste. It is modest yet powerful, and you can feel the individuality derived from the marl of the Kimmeridge layer that makes up the soil.

Roasted duck with cherry sauce, pork tenderloin with herb butter sauce

Production

The grapes are harvested by hand and carefully selected. 80% of the grapes are destemmed, and the remaining 20% are fermented whole bunches. Fermentation takes place in 15-20hL open conical tanks, with gentle extraction by light pigeage and remontage.
Maceration lasts for approximately 15 days to ensure optimal extraction of aromas and structure.
It is aged for 14 months in Burgundy barrels that have been used 2 to 5 times.
The wine is then transferred to stainless steel tanks and allowed to settle naturally without clarification or filtration, preserving the pure expression of the terroir.

Maison de la Chapelle

Delphine and Grégory Viennois, two native Burgundians, are returning to their roots with the creation of their wine merchant La Maison de la Chapelle. These two wine enthusiasts embarked on their adventure with their very first vintage in 2014. Delphine, who comes from a winemaking family, has always been associated with the great Burgundy houses. As for Grégory, an oenologist, he trained with some of the great names in Burgundy, including Domaine J. Prieur, de l'Arlot, Smtih-Haut Lafitte, M. Chapoutier, Ferraton Père & Fils and Stéphane Derenoncourt. Now back in Burgundy, running his own business, he is also technical director at Domaine Laroche in Chablis and consultant at Quinta Do Monte d'Oiro in Portugal.
