"Sengio" is the local dialect word for black basalt of volcanic origin, and this wine is indeed the perfect expression of the natural paradise where it comes from, where even the bees thrive.

Senjalta represents what Laura aims to achieve with her father's vast experience: no trends, a firm belief in respecting nature and biodiversity, and slow aging in the winery.

Tasting notes
Color: Bright straw yellow.
Aroma: Expressive notes of ripe peach, apricot, and white flowers.
Palate: A creamy texture unfolds with flavors of peach, nectarine, pink Lady apple, and chamomile. Well-balanced with fresh acidity, leading to a long and elegant finish.

Pairing
From seafood appetizers to main dishes, as well as truffle and vegetable risottos and pasta, and white meats.

Production

Alcohol fermentation: In steel vats without the skins using natural yeasts.


Maturation: In 2000 liters old oak barrels for 20 months with its fine sediments/concrete vats for the same time.

Balestri Valda

Balestri Valda is a family-run winery, originally founded by Guido Rizzotto, and now lovingly guided by his daughter, Laura. Nestled in the volcanic soils of Soave, they grow local grape varieties such as Garganega and Trebbiano di Soave, producing wines with a true sense of place. Their commitment to organic farming is matched by a deep respect for biodiversity, and even includes caring for bees. The basalt-rich soil imparts rich flavors and balance to the wines, while limestone in the ground adds a vital mineral mix for the vines. At the heart of their approach is a dedication to nature—no chemicals, only sustainable methods for their grapes and olives. The whole family is deeply involved, with Milena, Guido's wife and Laura's mother, offering her steady support and keeping the family in balance. This land has nurtured vineyards for centuries, and today, the hillside plots bask in sunshine, making the most of the region's warm climate. By carefully limiting the yields, they ensure that each bottle reflects the highest possible quality of their craft.
