A wine that beautifully blends the typical floral aromas of the Combai area in the Veneto region with the vibrant scents from the foothills of Mount Caneva. It features notes of white flowers, apple, yellow fruits, and small red fruits. With low residual sugar, its purity and distinct aromas are accentuated.

Pairing
It goes well with aperitifs, fish dishes (can be eaten raw), and various raw meats. A perfect match with San Daniele's prosciutto.

Production

Harvesting is done in stages based on the grape varieties. It begins with Chardonnay from Caneva in early September, followed by the varieties from Miane, and finally Pinot Noir.

The grapes are gently pressed, and to better extract the aromas, they undergo cold maceration. After approximately 40 days of fermentation, the wine is finished as a sparkling wine using the Charmat method.

About the Winery

Balan

The Balan company was founded in 1962 by a very young Sergio Balan, who thus put to good use the knowledge gained working with his father Giuseppe and his grandfather Jeremiah: both had various agricultural activities, but were known above all as, we would say today, specialized courtiers in the wine sector. During the First World War, Giuseppe, who left for the front, could not take care of the family business. At that time his wife Rosa Stella played a decisive role in the stability of work and the maintenance of relationships built by her husband.
