The refreshing aroma of grapefruit, white peach, and herbs spreads throughout the mouth, followed by a pleasant salty and refreshing taste. Production area: Northern slopes of Etna, Castiglione di Sicilia
Cultivation method: Cordon training (hedge style)
Pruning method: Spur cordon method (short pruning)
Yield per hectare: 70 quintals (7,000 kg)
Harvest season: Mid-October

Vinification
The hand-picked grapes are transported immediately to the winery in small wooden boxes.
The grapes are hand-sorted on a conveyor belt, destemmed, lightly crushed, and then gently pressed.
The juice is clarified at low temperatures and then fermented at a temperature of 15-16°C.
After fermentation, the wine is aged on the lees for approximately three months, then in stainless steel and cement tanks for four to six months.
