The grapes are hand-picked and completely de-stemmed without being crushed. The wine is fermented in open stainless steel tanks and brewed for about three weeks. It is aged in old barrels for 10 months. The deep garnet color speaks to the quality of the wine. The aroma is complex and attractive. It features black fruits such as blackcurrant and blackberry, spices such as violets, black pepper, and licorice, as well as smoky nuances.

Tasting notes
Deep ruby in color, when poured into a glass, the wine first releases gorgeous aromas of black fruits (black cherry, cassis) and violets, which over time develop into black pepper, licorice, and an earthy minerality.
When you put it in your mouth, you can feel the concentrated fruitiness, along with the smooth tannins and moderate acidity.
The spices and roasted aromas from the barrels tighten the aftertaste, leading to a supple, elegant, long finish. A wine that already exudes a high level of perfection despite its youthfulness.

Production

The grapes are hand harvested and completely destemmed, without being crushed.

The stainless steel tanks are opened for fermentation and the wine is brewed for approximately three weeks.

During this time, frequent remontage (liquid circulation) is performed for short periods of time.

Malolactic fermentation takes place in barrels.

Aging takes place in old barrels for 10 months.

Native of the Rhône Valley, Julien Pilon spent more than 10 years working in Spain and Roussillon, learning winemaking in famous wineries such as Mas Amiel (Roussillon), Terra Remonta (Spain) and Jean Pierre Villa (Rhone). Julien Pilon described himself as a landless winemaker when he started on his own in 2010.
