La Nouvelle Donne was founded in 2007 by Wilfried Valla in Cars, in the heart of Roussillon, with the aim of creating a wine that stood out from the classics of the region.
Here, no cultured yeast is used, no mass production is avoided, no harvesters are used, no acidification is added, and Wilfried aims to make natural wines free from additives and human intervention.
He began his career as a biochemist in Dijon, and even then had the goal of adapting Burgundian winemaking to the Roussillon terroir.
The vineyards are located on the Col de la Donna, over 300 metres above sea level, and by taking different approaches for each plot with a different climate, they have succeeded in achieving perfect organic cultivation.
All grapes are hand-harvested and the vinification is carried out without additives in demi-muids or large barrels (no new oak).
The wines he produces reflect the freshness that comes from the terroir's altitude and bring out the complex aromas of old vines, resulting in very smooth and deep flavors.
