Collection: La Nouvelle Donne

La Nouvelle Donne was founded in 2007 by Wilfried Valla in Cars, in the heart of Roussillon, with the aim of producing wines that stood out from the classics of the region. Here, no cultured yeast is used, there is no mass production, no harvesters, no acidification, etc. Wilfried aims to make natural wines without additives or human intervention. He began his career as a biochemist in Dijon with the goal of adapting Burgundian winemaking to the Roussillon terroir. The vineyards are located on the Col de la Donna, more than 300 metres above sea level, and by adapting their approach to each plot with its different climate, they have succeeded in cultivating the perfect organic crop. All grapes are hand-picked and the vinification takes place without additives in demi-muids or large barrels (no new oak barrels).
