[Adding a unique character to the freshness unique to Bobal]
The project aims to produce fresh, light and unique wines with Mediterranean characteristics, for which it chose the villages of Casas de Benitez and Pozoamaro, located at an altitude of over 750m and close to the Júcar River.
Due to its proximity to the river, the soil composition is diverse, with pebbles on the surface and clay and limestone or gravel and sand underneath.
After harvesting, Bobal grapes are selected and fermented in stainless steel tanks, concrete tanks, and French oak barrels using wild yeasts. Extraction is done by gravity and by hand, and the grapes are aged in French oak barrels and concrete tanks.
