Aurelio explores various grape varieties and soils in Ribera del Júcar, Sierra de Gredos, and Ribera del Duero to capture the core of each terroir. He values old vines for their ability to produce pure and fresh wines that reflect their origins. In the Sierra de Gredos, he discovered the expressive potential of Garnacha grapes grown at high altitudes, resulting in vibrant and complex wines reminiscent of Burgundy. In Ribera del Duero's Soria, Aurelio crafts a single wine using Tempranillo grapes, incorporating the white Albillo Mayor variety to soften its firm tannins and marked acidity.
