Production

Fermentation occurs in concrete tanks at a low temperature (around 20°C), with pumping over up to twice a day. Malolactic fermentation is completed simultaneously with alcoholic fermentation. To preserve the fruity aroma, the grapes are pressed after fermentation is complete. A small portion of the wine is aged in old barrels (used) to give a slight body and oak flavor.
