The vineyards are located on gentle slopes at the foot of the Cévennes mountain range. The soil is stony, rich in limestone, with deep clay layers. The plots selected for this cuvée offer a good balance between leaf growth and grape production, with moderate yields and ideal sunshine. Vineyard management focuses on a preventive rather than reactive approach, with minimal intervention.

Tasting Comments

Tasting Notes
A deep, intense ruby red. Aromas of red fruits, allspice and cloves. A subtle hint of old wood, blackberries and cranberries create a wonderful harmony. Fine tannins provide balance, freshness and beautiful structure. Fresh on the palate, with ripe plums and spices on the finish.

Pairing
It pairs well with beef steak, venison ceps and washed-down cheeses.

Technical Data

The grapes are harvested at optimal ripeness and fermented in concrete tanks at a temperature of around 28°C. They are pressed immediately after fermentation and then aged in a combination of historic foudres (large barrels), demi-muids (600L barrels), barriques, and small tanks, giving the wine depth and complexity in the final blend.
