Grapes grown in calcareous soil and the Mediterranean sea breeze are carefully brewed at low temperatures. The aromas of citrus and white flowers are harmoniously combined with crisp acidity and a mineral feel, resulting in a refreshing and clear taste. It goes perfectly with seafood and can be enjoyed all year round, but is especially suitable for the hot season.

Production

Comment

A true maritime terroir. Picpoul Blanc has been rooted in the Thau Lagoon basin since the 14th century. It is an ancient and iconic variety that ripens somewhat late and really shows its character in this region. It has adapted well to the Mediterranean climate, which allows it to retain a beautiful freshness that is especially perfect with the saltiness of Bouziges oysters, but that's not all. Typical of this region, the harvest is done in two stages: first to obtain lively acidity, and then to bring out complexity.

Winemaking

The wine is harvested in two stages, the first for freshness and the second for aroma, then fermented at low temperature and aged on fine lees.

The 33-hectare vineyard is located on the clay-limestone hills surrounding the Thau Basin, benefiting from the sea breezes and the scents of the garrigue. This terroir is rich in colors: the reds and yellows of the clay-limestone soil, the greens of the garrigue, and the blues of the sky and the Thau lagoon. The Mediterranean climate allows the grapes to reach optimal ripeness and fully express their typicity.
