Grapes grown in calcareous soil and the Mediterranean sea breeze are carefully brewed at low temperatures. The aromas of citrus and white flowers are harmoniously combined with crisp acidity and a mineral feel, resulting in a refreshing and clear taste. A true maritime terroir. Picpoul Blanc has been rooted in the Thau Lagoon basin since the 14th century. It is an ancient and iconic variety that ripens somewhat late and really shows its character in this region. It has adapted well to the Mediterranean climate, which allows it to retain a beautiful freshness that is especially perfect with the saltiness of Bouziges oysters, but that's not all. Typical of this region, the harvest is done in two stages: first to obtain lively acidity, and then to bring out complexity.
