This elegant and vibrant white wine combines the minerals nurtured by the volcanic soil with the fruit. The gorgeous aroma of white peach and golden cherries is layered with a toasty finish, combining delicacy and depth. As light as the winds of Greek mythology, this wine stimulates the intellect and senses.

Tasting Notes
Appearance: Bright golden yellow color
Nose: Rich and clear aromatic texture. Fresh notes of ripe exotic fruits, citrus peel, white pepper, herbs and eucalyptus honey.
Taste: The taste envelops you as you put it in your mouth, and the impression of the aroma spreads throughout your mouth. It is fresh and slightly salty, with a long, lingering mineral finish.

Tomato and mozzarella caprese, grilled white fish with lemon butter sauce, seafood risotto

Technical Data

After approximately 48 hours of cold soaking, the grapes are lightly pressed and fermented in stainless steel tanks.
Once alcoholic fermentation is complete, the majority of the wine is aged on the lees in stainless steel tanks for approximately three months.

The remaining wine is aged in new French oak barrels, then bottled as a blend of the varieties.

It is then aged in the bottle for a further 2-3 months before being shipped.
