Cesanese is an indigenous variety from the province of Rome, known for its fruity and mineral qualities, along with a velvety smoothness. This cuvée wonderfully expresses the characteristics of the grape variety.

Tasting notes
Appearance: Deep garnet color.
Aroma: A rich and elegantly aged bouquet, with aromas of ripe fruits such as black cherry, red plum, and fig, as well as herbal flavors such as tobacco, thyme, and oregano, a peppery spiciness, and a toasty aroma.
Taste: Powerful and mouth-filling, with fine tannins and balanced fruit leading to a dry finish.

Grilled lamb chops, risotto with Parmigiano Reggiano, pasta with beef ragout

■Harvest: Last week of September to first week of October

■Vinification: in stainless steel tanks

■Aging: 12 months in French barriques, then 6 months in stainless steel tanks

The Ômina Romana winery is a family business founded in 2007 on the initiative of the Börner family. The choice of location for the business project was made in the Velletri area, about 40 km south of Rome, amidst the green volcanic hills of the Castelli Romani, overlooking the Tyrrhenian Sea.
