This wine, inspiRed by the principle of "BONITAS (Goodness)" from the "ARS MAGNA" of the medieval philosopher Raimundus Lullus, expresses goodness, quality, honesty, and fertility. The grapes are grown with maximum care in vineyards with ideal soil layers and structure. Made from Chardonnay grapes that clearly exhibit the variety's characteristics, this wine is rich in aroma and mineral notes. The combination of tireless efforts in the cellar and aging techniques using oak barrels results in the creation of a high-quality and refined Ars Magna series Chardonnay.

Tasting notes
Color: Vivid golden hue
Aroma: Rich and complex, with distinct aromas of ripe fruit, reminiscent of white peach. There's a subtle fragrance of broom flowers, followed by a gentle, pleasant toastiness at the end.
Palate: A faint mineral note is present, offering a well-balanced profile. The finish is long-lasting, with expansive and rich flavors.

Production

The carefully selected grapes undergo a 48-hour cold maceration, followed by gentle pressing. Fermentation takes place in new French oak barrels. The wine is aged on its lees in the barrel for a typical period of 12 months, with regular bâtonnage. After bottling, it is aged for at least an additional 12 months.

The Ômina Romana winery is a family business founded in 2007 on the initiative of the Börner family. The choice of location for the business project was made in the Velletri area, about 40 km south of Rome, amidst the green volcanic hills of the Castelli Romani, overlooking the Tyrrhenian Sea.
