This wine uses Chardonnay grapes from vines over 30 years old grown on steep southeast-facing slopes that are mainly made of clay and limestone, mixed with sandstone and white sand. After lightly pressing each bunch, it is aged for 10 months in French oak barrels that have been used 4 to 5 times. The stirring process by batonnage creates a rich, rounded flavor, with a harmonious balance of pear, spice, and coconut sweetness, and toasted and vanilla aromas. A classic barrel-aged Chardonnay with a delicate mineral finish.

Tasting notes
A fresh impression created by the exotic sweetness of pear, spices, and coconut. The rich roundness brought about by 10 months of barrel aging and batonnage, the toasted aroma and vanilla aroma blend into the wine, and the delicate minerality derived from the terroir tightens the aftertaste.

Cultivation
"Pelle" is the name of this Chardonnay vineyard and means "stone."
The soil is a mixture of clay, limestone, sandstone and white sand.
Vineyard: 32 year old Chardonnay vines planted on a steep southeast facing slope.
The grapes are harvested by hand and sorted in the field.

Winemaking
Yield: 45hL/hL
Winemaking: Pressed whole bunch, lightly racked. Fermented naturally in 600L French oak barrels.
During the latter half of fermentation, the wine is batonnaged (stirred) daily.
Aging: Aged for 10 months in the same 600L French oak barrels (used 4 to 5 times).
Annual production: 4,000 bottles
