The 45-year-old Chenin Blanc grapes, grown on a plateau at an altitude of 350m, are mixed with clay, limestone, and white sand, and are fermented at low temperatures using natural yeast. By pressing the whole bunch and aging in tanks, the purity of the fruit and the complex aroma are both achieved. The wine has a refined taste with nuances of spice, honey, and ripe fruit, a fresh and smooth mouthfeel, and a powerful lingering finish.

Production

Cultivation
"Petite Rive" is the name of the Chenin Blanc vineyard.
The plateau that stretches above the village of Cepie has clay-limestone soil mixed with sandstone and white sand.
Hand-harvested in the cool of the day, the 45-year-old Chenin Blanc vines are planted on a south-east facing plateau at an altitude of 350m, with spectacular views over the Pyrenees.

Winemaking
Yield: 40hL/ha
Winemaking: Pressed directly from the bunch, lightly racked, and fermented at low temperature using wild yeast.
Aging: Aged in tanks during winter.
Annual production: 2,700 bottles
