Terroir: Marl and clay soils, 300m above sea level.
Age: 35 years

Before fermentation, the wine is left for 5 hours of cold maceration, followed by gentle pressing.
Fermentation is carried out at low temperatures, with 50% stainless steel tanks and 50% 228L barrels used as fermentation vessels.
Aging: 50% in stainless steel tanks with lees and batonnage.
Aged in 50% 228L barrels.
