Victor is the name of Julien's grandfather, who was from Chavanay, and Julien loved the smell of his grandfather's house. In this small appellation, they produce elegant wines with a mineral character. The name means "Victor's House."

Tasting notes
The aroma of acacia (also used for the barrels) and honey spreads with accents of verbena, finishing with a mineral touch. After the rounded flavors of walnut and honey, a pure and refreshing finish emerges. This wine is harmonious, elegant, and well-balanced.

White fish carpaccio, goat cheese

Production

The juice is directly pressed, and fine solids are allowed to settle before extracting the clarified juice for fermentation in old barrels. Aged for 10 months in 90% used barrels and 10% new barrels, with malolactic fermentation. The lees at the bottom of the barrel are not stirred.

Domaine Julien Pilon

Native of the Rhône Valley, Julien Pilon spent more than 10 years working in Spain and Roussillon, learning winemaking in famous wineries such as Mas Amiel (Roussillon), Terra Remonta (Spain) and Jean Pierre Villa (Rhone). Julien Pilon described himself as a landless winemaker when he started on his own in 2010.
