Tasting notes
Pale straw color with a golden hue. The aroma that rises from the clear glass is a moist, enveloping aroma of ripe white and yellow peaches, as well as fresh melon and green apple skin, and a chalky mineral aroma derived from the cold limestone. As the glass swirls, subtle nuances of white flowers (acacia and gorse) emerge, adding complexity and depth to the palate.

The first impression on the palate is a sharp, lively acidity. Citrus peel (the white part of grapefruit), the bittersweetness of green almonds, and a salty mineral structure form the core. The fruitiness is reminiscent of peach and ripe pear, and the texture is slightly rounded yet maintains a slender impression. Towards the end, the aftertaste develops a hint of seawater, likely derived from seashells, and a lingering smoky lime finish, leaving a refreshing, relaxed feel even after swallowing.

Fields and soil:
“Les Culs de Beaujeu” is an ancient plot of land, originating from the monks (Beaujeu Abbey).
Exposure: Northwest facing (cool climate zone)
Soil composition: Kimmeridgian-limestone mixture, and clay mixture.

Age: Over 45 years old

Cultivation and harvesting:
Whole bunch hand-picked harvest (by hand)
Tendency to late harvest (emphasis on full ripeness)

Brewing, fermentation and maturation:
Whole bunch pressing (using an old vertical press)
Fermentation with natural (wild) yeast
Equipment used: Aging in old barrels (old demi-muids/old tonneaux barrels). New barrels are rarely used.
