Production

Cabernet Franc (predominantly) and Merlot. Harvested at the end of phenolic maturation. Temperature-controlled "mixed grain" fermentation. Punchdown and airlift. Aging in barrels, including some new, then tank until early bottling. Aiming for refinement, persistence, and salinity.
