Production

The wine is made from carefully selected Semillon and Sauvignon Blanc plots, with grapes that are 45 years old.
Harvesting began on August 18th, the earliest ever.
The grapes were very healthy and had good acidity, so they were harvested at the optimum ripeness.
Semillon and Sauvignon Blanc are harvested alternately for each terroir.

Maceration: Sauvignon Blanc only (2-12 hours, depending on harvest)
Pressing: Gentle pneumatic press for approximately 2 hours and 30 minutes.
Fining: Debourbage at 10°C.
Fermentation: 15% is fermented in new barrels and temperature is strictly controlled (17°C to 22°C).
Malolactic fermentation: Not performed to preserve fresh acidity.
Aged for 9 months in 70% used barrels and 30% new barrels.
Batonnage is adjusted for each vintage and takes place on average once a week or every two weeks.
