Raventós Rosell is located in Masquefa, on the Catalan Mediterranean coast. A little to the west of Barcelona, in the north-east of Spain. The district boasts some of the most interesting wines in Spain.
Because of their hilly terrain, this is a region that offers exciting and very diverse wines.
The harvest generally takes place in September. The grapes are pressed with great care (0.2 kg), giving approximately ½ litre of wine per kg. Vinification takes place after the harvest and it is not until March/April that the still wine is blended.The wine is bottled and a syrupy mixture of yeast and sugar is added. The wine then ferments again, but this time for 1 month in the bottle. This means that the carbonation remains in the bottle, giving the wine delicious bubbles.The wine is then kept for 12 months before being sold. During this period, the bottles are turned over and over again (automatically) so that the precipitate accumulates at the top of the bottle. The top is frozen and the precipitate is "thrown off".In this dry version, the same wine is added and only a little cane sugar is added.
Cava law requires a minimum of 9 months storage in the bottle with sediment.
