[From antiquity into the future — the standard-bearer of DO Bullas]
Founded in 1950, this is the largest winery in DO Bullas, and its wines are marked above all by their complexity. Every stage, from vinification through to the sale of the wine from the cellar door, is considered with care. On a terroir where vines have been grown since Greek and Roman times, the people who know this land best make its wines with meticulous attention. The vineyards stretch out along the mountain ranges, reaching west to the border with Andalusia and east towards the Mediterranean coast.
The heart of the winemaking philosophy here is a preference for old vineyards, because the balance they achieve is, in the estate's view, without equal. The depth of an old vine's roots, its ability to search out a wide expanse of soil, and its own capacity to regulate its vigour all serve to minimise the effect of a growing season's swings. That translates first into better fruit and, ultimately, into greater complexity in the wine.
None of which is to dismiss the importance of new planting: new vineyards are essential if quality standards are to be sustained into the future. But the whole process of planting and cultivation is studied closely by the winery team, so that each vineyard develops in balance and sits perfectly within its natural surroundings.
