A refreshing aroma of flowers and yellow citrus fruits. Floral but not too flashy, with a mineral and acidity that makes it very fresh. It gives off a dignified impression reminiscent of a Parisian woman. Perfect as an aperitif, salad, grilled fish, grilled seafood, octopus pie with tomato sauce, etc. It can be enjoyed as a casual first drink or paired with a main course.

Production

Harvested by machine in the early morning of September. After destemming, it is directly pressed. Separate the juice from the rest for 36 hours at 8 degrees. Fermentation is carried out under temperature control at 15 degrees. Aged for 1 month on fine lees in stainless steel tanks. 4500 trees/1ha.
