Deep purple in color with hints of violets, the wine has a black cherry and violet aroma, a powerful, smooth mouthfeel and elegant tannins, and is a perfect combination of ripe grapes and the limestone terroir.

Tasting notes
Deep purple in color with a hint of violet, the nose immediately reveals aromas of black cherry and violet, faithfully expressing the excellent terroir of Irancy.
The palate is powerful, with smooth, elegant tannins and a juicy flavour.
The perfectly ripe grapes and the limestone soil give the wine a balanced overall taste.

Roasted duck with berry sauce, braised veal in red wine sauce, mushroom risotto

Production

The harvest is done by hand and carefully selected. Half of the grapes are destemmed and the other half are vinified whole bunches. Fermentation takes place in 15-20hL open conical tanks with regular punching down and pumping over to ensure adequate extraction. Maceration lasts for around 15 days to allow optimal development of aromas and structure.
It is aged for 14 months in Burgundy barrels (used 2 to 5 times).
It is then transferred to stainless steel tanks where it undergoes natural settling without clarification or filtration, preserving the pure expression of the terroir.

Maison de la Chapelle

Delphine and Grégory Viennois, two native Burgundians, are returning to their roots with the creation of their wine merchant La Maison de la Chapelle. These two wine enthusiasts embarked on their adventure with their very first vintage in 2014. Delphine, who comes from a winemaking family, has always been associated with the great Burgundy houses. As for Grégory, an oenologist, he trained with some of the great names in Burgundy, including Domaine J. Prieur, de l'Arlot, Smtih-Haut Lafitte, M. Chapoutier, Ferraton Père & Fils and Stéphane Derenoncourt. Now back in Burgundy, running his own business, he is also technical director at Domaine Laroche in Chablis and consultant at Quinta Do Monte d'Oiro in Portugal.
