A "pure" white wine, nurtured by the sunshine of Southern France and its stony land

This white wine hails from the dry, calcareous lands of the Gard department in Southern France, 40km from Nîmes and Montpellier, where it is organically cultivated (though not yet certified). Grapes are hand-picked from vines over 20 years old and carefully sorted. The wine offers a rich and fresh taste, combining the richness of barrel-fermented Roussanne with the roundness of Rolle and the refreshing citrus aroma of Sauvignon. It pairs excellently with grilled seafood and Japanese cuisine. Serve well-chilled as an aperitif.

Tasting Notes
Appearance
Brilliant lemon yellow. A slight green reflection on the rim gives a youthful, healthy impression.

Nose
The initial impression is a bright aroma of grapefruit and citrus peel, pear, and white flowers. Swirling the glass reveals rich nuances of honey, apricot, and white peach from barrel-fermented Roussanne, layered with Southern French herbal notes of thyme and fennel reminiscent of garrigue, and a subtle flinty minerality.

Palate
The attack is fresh, with vibrant acidity from Sauvignon Blanc and Rolle bringing everything into focus. In the mid-palate, Roussanne's mellow richness and depth expand, and a saline minerality, reflective of the lean limestone soil, lingers through the finish. Despite its light drinking feel, aided by a modest 12.5% alcohol content, there's a firm concentration of umami characteristic of low-yield grapes. The finish leaves a pleasant bitterness of citrus and a refreshing herbal sensation.

Pairing
White fish carpaccio with citrus and olive oil
Herb-roasted chicken thigh
Tempura (kisu, shrimp, and seasonal vegetables, served with salt)
