[The simple and pure taste of Cabardes]

Taken over in 2011 by Olivier and Stéphanie Lamée (founded by Stéphanie's parents in 1973), Maison Ventenac is located in the heart of Cabardès, overlooking the city of Carcassonne, and owns 130 hectares of vineyards facing the Pyrenees Mountains.

Far from making wines that are aristocratic and divine, we aim to make wines that are simple and easy to drink for everyone. To achieve this, we try to make wines using single varieties as much as possible. According to the AOC Cabardès regulations, the wine must be a blend of at least 40% international varieties Cabernet Sauvignon, Cabernet Franc, and Merlot, and at least 40% southern French varieties Grenache and Syrah, but by using a single variety, Ventenac allows the wine's identity to be expressed simply and directly.

When it comes to winemaking, we believe that all you need is good grapes, suitable soil, and indigenous yeast.

The Ventenac vineyard is crossed by veins of limestone, which gives the wine its salty, iodine and chalky notes. No sulfites are added during harvesting, allowing the indigenous yeasts to work organically.

The winemaking process is carried out in stainless steel tanks for the white and rosé wines, mostly in concrete tanks for the red wines, or in terracotta vats of various sizes (160L, 530L, 1,600L), and even in wooden barrels of only 20hL, but in a variety of ways, depending on the winemaker's curiosity. Furthermore, no sulfites are added during the vinification process.
