The wine is aged in stainless steel tanks for 20 to 30 days. Each variety is vinified separately. Daily remontage and pigeage are performed, and the temperature is controlled at a maximum of 28°C. The Carignan is aged for 12 months in 600L oak barrels. The other varieties are aged for 12 months in tanks, then blended and bottled. The wine has a lively flavor with raspberry and blackcurrant buds and a pleasant roundness.

Cultivation

The south-facing hills are in the area known as Estevenas, Les Douillets and Les Garrigues.
Clay and limestone soil.
15ha, trees aged 15-50 years.

Winemaking

The wines are aged in stainless steel tanks for 20 to 30 days. Each variety is vinified separately.

Remontage and pigeage are performed daily, and the temperature is controlled at a maximum of 28°C.

Carignan is aged for 12 months in 600L oak barrels, while the other varieties are aged for 12 months in tanks.

Saint Dominique Bastide

La Bastide Saint Dominique

La Bastide Saint Dominique is located in the southern Rhône, midway between Avignon and Orange. The estate was established around a 16th-century chapel and was founded in 1976 by Gérard and Marie-Claude Bonnet. In 1999, their son, Éric Bonnet, took over the management from his parents, bringing both vitality and modernity while preserving the family tradition.
