Production

Cultivation

Clay-limestone soil, 30-year-old vines
Grown using traditional methods without the use of chemical herbicides or synthetic fertilizers.

Winemaking

The grapes are harvested by hand and carefully transported in small containers.
After harvest, the fruit is thoroughly sorted on a sorting table upon receipt.
The grapes are gently pressed and then transferred to barrels for wild yeast fermentation, and the wine is aged on the lees and batonnaged to add texture and complexity.
Malolactic fermentation takes place in 228L oak barrels over a period of 12 to 18 months (25% new barrels).
The wine is transferred to stainless steel tanks for six months before bottling, where it is lightly clarified and filtered before being bottled at the domaine.

Domaine Antoine Olivier was created in 1967. Until 2003, it was Hervé Olivier who ran the estate before handing over to his son Antoine. In the vineyard, the estate practices plowing and reasoned control in order to use as few treatments as possible.
