Technical Data

Cultivation

Clay-limestone soil, 60-year-old vines
Grown using traditional methods without the use of chemical herbicides or synthetic fertilizers.

brewing

The grapes are harvested by hand and carefully transported in small containers.
After harvest, the fruit is thoroughly sorted on a sorting table upon receipt.
Fermentation takes place in temperature-controlled stainless steel tanks, without punching down, and delicate procedures are used to gently extract the juice and color.
It is then aged for 12 months in oak barrels: 20% new, 20% first-use, and 20% second-use.
Further aging in stainless steel tanks for 4 to 6 months.
The wine is bottled on-site and is not clarified or filtered.
