Technical Data

Cultivation

Clay-limestone soil, 40-year-old vines
Grown using traditional methods without the use of chemical herbicides or synthetic fertilizers.

brewing

The grapes are harvested by hand and carefully transported in small containers.
After harvest, the fruit is thoroughly sorted on a sorting table upon receipt.
The grapes are fermented whole, using wild yeast and without any punching down.
Aged for 12 to 14 months in barrels (1/3 new barrels, 1/3 1-year-old barrels, 1/3 2-year-old barrels).
The wine then rests in tanks for 5-6 months to stabilize.
The wine is bottled at the domaine and is not clarified or filtered.
