The grapes are from a fine, selected plot of Pinot Noir, providing an exquisite balance of sweetness and the roundness of great Burgundy wines.

Production

Harvesting is carried out by hand, the grapes are transported in small boxes, and the grapes are sorted before destemming. Fermented in temperature-controlled stainless steel tanks. A light pigeage to gently extract the juice and color.

Aged in oak barrels for 14 months (1/3 new barrels, 1/3 1 year old, 1/3 2 year old). The wine is aged in tanks for 8 months. It is neither fined nor filtered before being bottled on-site at the domaine.

Domaine Antoine Olivier was created in 1967. Until 2003, it was Hervé Olivier who ran the estate before handing over to his son Antoine. In the vineyard, the estate practices plowing and reasoned control in order to use as few treatments as possible.
