Technical Data

Cultivation

Clay-limestone soil, 25-year-old vines
Steep south-facing slope.
Grown using traditional methods without the use of chemical herbicides or synthetic fertilizers.

brewing

The grapes are harvested by hand and carefully transported in small containers.
After harvest, the fruit is thoroughly sorted on a sorting table upon receipt.
The wine is pressed slowly and vinified without batonnage until the malolactic fermentation is complete.
The wine is aged for a long period, with the first 12 months in oak barrels on the lees.
(1/4 new oak barrels), no racking, then aged in tanks for 6 months before bottling at the domaine.
Fined and lightly filtered.
