A wine that combines love for the soil and the environment with a light-hearted sense of humor. The name Cerises is a play on words, combining the French words "cerise" (cherry) and "crise" (crisis). However, there is no crisis in this wine at all, and it has a lively taste with gorgeous floral and cherry aromas and a slight hint of cedar from barrel aging.

Production

Fermented in stainless steel tanks under temperature control. No pigeage is done, and the soft-colored juice is carefully extracted, then aged in oak barrels for 12 months. 20% new oak barrels, 20% barrels that have already been used once for winemaking, 20% barrels that have been used twice, etc. Then aged in tanks for 4 to 6 months. Bottled at the Domaine without clarification or filtration.

Domaine Antoine Olivier was created in 1967. Until 2003, it was Hervé Olivier who ran the estate before handing over to his son Antoine. In the vineyard, the estate practices plowing and reasoned control in order to use as few treatments as possible.
