Cerisesという名は、フランス語のcerise（サクランボ）とcrise（危機）を掛けた言葉遊び。けれどこのワインに危機はなく、土壌と環境への愛情が軽快なユーモアとともに表れています。華やかな花とサクランボの香りに、樽熟成によるわずかな杉のニュアンス。フレッシュでいきいきとした味わいと、ソフトなタンニンが心地よく続きます。白身肉やグリルした肉、ジャンボンペルシェとともに。

Winemaking & technical data

Fermented in stainless steel tanks under temperature control. No pigeage is done, and the soft-colored juice is carefully extracted, then aged in oak barrels for 12 months. 20% new oak barrels, 20% barrels that have already been used once for winemaking, 20% barrels that have been used twice, etc. Then aged in tanks for 4 to 6 months. Bottled at the Domaine without clarification or filtration.
