Cédric Bouchard, the revolutionary of the Côte des Bar, adheres to the principles of "single vineyard, single varietal, single vintage, non-dosé." The Pressules vineyard, planted in 2007, is his youngest vineyard, located on the west-northwest-facing slope of the left bank of the Ource River. He planted 10 different massal selections (Pinot Fin) collected from Gevrey-Chambertin producers at an extremely high density of 12,000 vines per hectare. Initially, he intended to produce red wine, but based on the quality of the juice, he shifted to Blanc de Noirs. This delicate and nuanced wine is supple, aromatic, and possesses a pleasant bitterness and texture. Furthermore, 2020 will be the final vintage of Pressules. This is a rare bottle.

Tasting Comments

Tasting Notes
A somewhat deep color. Bold aromas of vibrant red apple, tart wild strawberry, almond brioche, berries, and spicy honey rise from the glass, intertwined with peppery notes of wild herbs and mineral depth.
Medium-bodied with concentrated, "sauvage" (wild) fruit, it offers powerful Pinot drive and lively fruit flavors of strawberry and apple, brimming with vinosity, alongside delicate salinity.
The low 3.75 atmospheres of pressure create soft, enveloping bubbles, and a pleasant bitterness lingers on the finish, resulting in a flavor profile where power and delicacy are in perfect balance.
