「一畑・一品種・一収穫年・ノン・ドサージュ」を貫くセドリック・ブシャール。プレスルは彼が2007年に植えた最も若い畑で、ジュヴレ=シャンベルタンから集めた10種のマサル・セレクションを1haあたり12,000本という高密度で植えました。赤リンゴや野いちご、アーモンドブリオッシュの香りに、ワイルドなハーブのペッパー香とミネラルが絡みます。3.75気圧の柔らかな泡と、心地よい苦味の余韻。プレスル最後の年となる希少な一本です。

Tasting note

A somewhat deep color. Bold aromas of vibrant red apple, tart wild strawberry, almond brioche, berries, and spicy honey rise from the glass, intertwined with peppery notes of wild herbs and mineral depth. Medium-bodied with concentrated, "sauvage" (wild) fruit, it offers powerful Pinot drive and lively fruit flavors of strawberry and apple, brimming with vinosity, alongside delicate salinity. The low 3.75 atmospheres of pressure create soft, enveloping bubbles, and a pleasant bitterness lingers on the finish, resulting in a flavor profile where power and delicacy are in perfect balance.

Cultivation Information
・Single vineyard "Pressures" (Côte des Bar), the youngest vineyard planted in 2007
・Field blend of 10 massal selections (Pinot Fin) from a Gevrey-Chambertin producer
・0.25ha, 15 rows, approximately 3,000 vines, high-density planting of 12,000 vines per hectare, west to northwest-facing slope on the left bank of the Ource River
・Clay and Kimmeridgian limestone soil, organic farming, extremely low yields

Winemaking Information
・Philosophy of "one vineyard, one variety, one vintage, non-dosage"
・Uses only free-run juice (first pressing), fermented with wild yeasts
・Whole clusters foot-trodden, made with minimal lees
・Long, cool secondary fermentation to achieve finer bubbles and greater vinosity (lower pressure of 3.75 atm)
・Non-dosed (no dosage), disgorgement in April 2024
・2020 is the last vintage of Pressures (due to vineyard conversion)
