Tasting notes
Concentrated aromas of ripe black cherries and cassis are layered with nuances of violets, black pepper and a slight smoky flavor.

On the palate, dense tannins and firm acidity support the structure, while the fruitiness is layered with spices and earthiness.

From the middle to the aftertaste, a pleasant bitterness reminiscent of bitter cocoa lingers along with minerals, giving the palate a sophisticated and complex feel.

A flavor that deepens over time and has great aging potential.

Soil: Kimmeridgian clay-limestone soil

Elevation: 170-250m

Exposure: South to southwest facing slope

Cultivation method: Organic farming, no herbicides, hand harvesting and sorting.

Fermentation: Fermented using natural yeast in stainless steel tanks under temperature control.

Aging: Aged for 3 years in new 600L demi-muid barrels. Bottled without fining or filtration.
