Soil: Upper Jurassic, middle and upper Kimmeridgian. Very stony, with many small marine deposits.

Average yield: 35-40hL/ha

brewing
After fermentation with natural yeasts, the wine is aged for 13 to 15 months in 1-4 year old French oak barrels. No batonnage (lees stirring) is performed and SO₂ use is kept to a minimum.
