貝殻を含む。
立地：北向き、南向きの斜面
栽培方法: 有機農法・ビオディナミ農法（ECOCERTおよびDemeter認証）
平均収量: 35～40hL/ha

醸造
天然酵母による発酵後、1～4年使用のフレンチオーク樽で13～15ヶ月熟成。バトナージュ（澱攪拌）は行わず、SO₂の使用は最小限。
