This Sauvignon Blanc, grown on cool north-facing slopes and Jurassic limestone soil, offers citrus aromas and firm acidity. The pure flavor, achieved through biodynamic farming and natural yeast, is layered with salty minerals and a clean, elegant finish. A perfect pairing with seafood and herb dishes.

Tasting Notes
The wine's pale lemon yellow appearance radiates a youthful brilliance. The aroma features citrus fruits such as grapefruit and lime, as well as green apple, white flowers, and herb nuances. The freshness typical of cool-climate regions is accented with subtle mineral and flint nuances. The palate is dominated by firm acidity from the attack, harmonizing the refreshing fruitiness typical of Sauvignon Blanc with a salty minerality.
The finish is clean, with lingering impressions of lemon peel and flint.

brewing
After being hand-sorted on a sorting table, the grapes are destemmed and slowly pressed.
Fermented and aged in temperature-controlled stainless steel tanks using natural yeast.
No batonnage. Strict control through tasting.
Only minimal amounts of SO₂ are used during fermentation and aging, and adjustments are made as needed at bottling.
