Production

The stems are removed, and the grapes are soaked in liquid for several days to soften them for pre-fermentation. Over approximately 2 weeks, the mixture is gently stirred and pumped daily, allowing for a slow traditional alcoholic fermentation. The wine is aged in large barrels, frequently pumped to avoid separation with the lees. After lightly filtering, it is bottled with minimal carbon dioxide.
